Manchurian and Chinese delicacies

The Manchurian and Chinese delicacies appeared in Yangzhou for the first time. “The record of Yangzhou pleasure-boat” recorded the complete menu of Manchurian and Chinese delicacies when the official of Yangzhou entertained Qianlong Emperor. The banquet is divided into five grades with 108 dishes. There are four modes namely 6 banquets in three days, four banquets in two days, two banquets in one day and high quality banquet. Each banquet has 36 dishes corresponding to the 36 Tiangang. During the banquet, the Manchurian and Chinese dishes is served alternatively to make the diners to appreciate the lasting appeal of combination of food culture. The Royal Style is highlighted in arrangement of banquet, design of tableware, music, sculpture and the manner of serving food. The dish and desserts condense the technical essence of cooking master to display “the first good taste of southeast”---the charming of Huaiyang flavor.
